Christmas Gingerbread Biscuits
Perfect for gifting at Christmas!
What you need:
750g plain flour
1 tsp baking powder
2 tsp ginger
1 tsp mixed spice
1tsp cinnamon
110g sugar
200g golden syrup
150g black treacle
225g butter
Optional to decorate: Royal icing
What to do:
1. Heat oven to 180°C, 60°C fan, gas mark 4.
2. Sift the flour into a bowl and add the baking powder and spices.
3. In a saucepan gently heat the butter, sugar, golden syrup and treacle and stir together until they are melted. Leave to cool slightly.
4. Add to the bowl of dry ingredients and mix to a dough.
5. Allow to rest and go cold.
6. Dust a work surface with flour and roll the dough out to about 1 cm thick.
7. Cut into biscuit shapes with a cutter or free hand.
8. Line a baking sheet with parchment and place the biscuits on it so that they are not touching.
9. Bake for 12–15 minutes.
10. Cool on the baking sheet for 10 minutes, then put on a wire rack to go cold.
11. Decorate with royal icing and leave it to dry
