What you need
Tablespoon of olive oil
1 Red pepper chopped
1 Orange or yellow pepper chopped
2 Large tomatoes Chopped
1 Large onion chopped
3 or 4 carrots chopped
Chicken stock or vegetable stock cubes
2 Sweet potatoes (or you can use normal potatoes)
What to do:
1. Put the Olive oil into a pan, and fry for a few minutes.
2. Add stock cubes and other vegetables.
3. Bring to boil for half an hour to 40 minutes, until vegetables are cooked.
4. Blend with blender or a liquidizer until smooth.
5. Then serve and enjoy.
